  • 4 large eggs
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • ¾ cup canola oil
  • 1 can pumpkin purée (15 oz / ~425 g)
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 teaspoons vanilla bean paste
  • ¾ cup unsalted butter, room temperature
  • ½ cup sour cream
  • 2 teaspoons vanilla bean paste
  • 4½ cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tin with liners.
  2. In a bowl, mix crushed graham crackers with brown sugar and cinnamon; press into cupcake liners for the crust.
  3. Beat cream cheese with sugar and vanilla until smooth; pipe into the center of each cupcake.
  4. In another bowl, whisk together flour, baking powder, spices, eggs, sugars, oil, and pumpkin puree; fold into dry ingredients.
  5. Fill each liner halfway with batter, add cheesecake filling, then top off with more batter.
  6. Bake for 18–22 minutes; cool completely before frosting.
