- 1 teaspoon lemon juice
- 2 teaspoons ground cinnamon
- ½ teaspoon kosher salt
- ¾ cup granulated sugar (divided)
- 3 tablespoons unsalted butter
- 1 recipe homemade pie dough (for two crusts)
- Egg wash: 1 egg beaten with 1 tablespoon milk
Instructions
- Preheat oven to 425°F and place a baking sheet on the middle rack.
- Peel, core, and thinly slice the apples. In a mixing bowl, combine cinnamon, salt, and ¾ cup sugar.
- Melt butter in a skillet over medium heat; add apples and lemon juice. Sprinkle the sugar mixture over apples and cook for 3–5 minutes until slightly tender. Add flour and cornstarch; mix well.
- Let the filling cool to room temperature. Roll out one pie crust into a 9-inch pie plate; pour in cooled filling.
- Cover with the second crust, sealing edges as desired. Brush with egg wash and sprinkle with remaining sugar.
- Bake for 20 minutes at 425°F, then reduce to 375°F for an additional 30–40 minutes until bubbling and golden brown.
- Allow to cool for at least 2–3 hours before slicing.
