  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter, cold and cut into cubes
  • 110 g water
  • 1 kg apples (Pink Lady, Royal Gala or Fuji)
  • 75 g unsalted butter
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water
  • 5 tbsp almond flour (or other type of finely ground nuts or breadcrumbs)
  • 1 egg
  • 1 tbsp cold water
  • 3 tbsp brown sugar
  • Vanilla ice cream or other flavor you prefer

Instructions

  1. Prepare the crust by mixing flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms; refrigerate for 30 minutes.
  2. For the filling, cook sliced apples with butter, brown sugar, cinnamon, cornstarch, salt, and water in a skillet over medium heat until tender (10–12 minutes). Cool.
  3. Preheat oven to 190°C (375°F). Roll out half the chilled dough and line a pie dish. Sprinkle almond flour on the bottom and fill with cooled apple mixture. Top with remaining dough in strips or as a full crust.
  4. Brush top with an egg wash made from beaten egg and water; sprinkle with brown sugar.
  5. Bake for 50–60 minutes until golden brown. Cool for 30 minutes before serving with vanilla ice cream.
