  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar (for apples)
  • 150 g granulated sugar (for pastry)
  • 150 g cornstarch
  • 4 egg yolks
  • 600 ml milk (your choice)
  • 2 tsp vanilla bean paste
  • Salt

Instructions

  1. Preheat the oven to 180°C (350°F). Peel, core, and slice apples thinly. Toss with 150 g sugar and salt; layer in a baking dish and bake for 30-40 minutes until softened. Let cool.
  2. Line a baking tray with parchment paper. Roll out gluten-free pastry sheets, sprinkle with cornstarch, prick with a fork, and bake for 15-20 minutes until golden. Cool completely.
  3. In a saucepan, whisk together egg yolks, cornstarch, 50 g sugar, and salt. Gradually add milk while stirring; cook over medium heat until thickened (8-10 minutes). Stir in vanilla paste and allow to cool.
  4. Assemble by layering pastry, custard, and baked apples on a serving platter. Finish with another layer of pastry and dust with powdered sugar before serving.
