  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • Spices: cinnamon, ginger, nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Crush the biscoff cookies in a food processor and combine with melted butter. Press into a springform pan and bake for 10 minutes.
  2. Toss sliced apples with brown sugar and spices; set aside.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add yogurt, vanilla, spices, and eggs one by one.
  4. Layer half of the cheesecake mixture over the crust, add the spiced apples, then top with remaining cheesecake mixture.
  5. Prepare streusel topping by mixing flour, brown sugar, oats, and melted butter; sprinkle over the cheesecake.
