  • 1 tablespoon brown sugar
  • 4 tablespoons salted butter, at room temperature
  • 3 large eggs
  • 3 1/24 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon cinnamon
  • 6 tablespoons salted butter, at room temperature
  • 2 Honeycrisp apples, chopped
  • 4 tablespoons salted butter, at room temperature
  • 6 ounces cream cheese, at room temperature
  • 1/4 cup maple syrup
  • 23 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. In a stand mixer bowl, combine warm milk, yeast, and brown sugar; let sit until bubbly.
  2. Add softened butter, eggs, flour (starting with 3 1/2 cups), and salt; mix until smooth.
  3. Cover and let rise for about an hour until doubled in size.
  4. Prepare filling by mixing sugars and cinnamon in a separate bowl.
  5. Roll out the dough into a rectangle, spread softened butter over it, top with apple mixture, roll tightly and cut into rolls.
  6. Place in greased baking dish; let rise again for 20–30 minutes.
  7. Bake at 350°F for 25–30 minutes until golden brown.
  8. While baking, prepare icing by melting butter until light brown; whisk in cream cheese, maple syrup, powdered sugar, and vanilla extract.
  9. Spread icing over warm rolls before serving.
