  • 34 pounds bone-in pork shoulder
  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups apple cider
  • 1 cup chicken broth
  • Fresh thyme and rosemary
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 bay leaf

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season pork with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and sear the pork until browned on all sides (5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions for 5 minutes; add garlic and cook until fragrant.
  4. Deglaze with apple cider, then add chicken broth, brown sugar, and Dijon mustard.
  5. Return the pork to the pot along with thyme, rosemary, and bay leaf. Bring to a simmer.
  6. Cover and transfer to the oven; braise for about 3-4 hours until fork-tender.
  7. Let rest before slicing or shredding to serve.
