- 3 small zucchini or 2 large
- 1 cup Panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 tablespoons Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 cup flour
- 2 eggs
- 1 tablespoon water
Instructions
- Slice zucchini into 3-4 inch sticks, about 1/2 inch thick. Pat them dry with a paper towel.
- Add flour to a resealable bag, toss in the zucchini sticks, and shake to coat.
- In a medium bowl, mix Panko, parmesan, Italian seasoning, garlic powder, and salt.
- In a small bowl, whisk eggs with water.
- Dip each zucchini stick into the egg mixture, then coat it with the Panko mixture.
- Lightly spray the air fryer basket with olive oil and arrange zucchini sticks in a single layer.
- Spray the zucchini lightly with oil, then air fry at 350°F (175°C) for 7-12 minutes, flipping halfway through.
- Remove once golden and crispy. Serve immediately with your favorite dipping sauce.
Notes
- Avoid overcrowding the air fryer to ensure even cooking.
- Store leftovers in the fridge for up to 3 days. Reheat in the air fryer for a crispy finish.
