Ingredients

  • 3 small zucchini or 2 large
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup flour
  • 2 eggs
  • 1 tablespoon water

Instructions

  • Slice zucchini into 3-4 inch sticks, about 1/2 inch thick. Pat them dry with a paper towel.
  • Add flour to a resealable bag, toss in the zucchini sticks, and shake to coat.
  • In a medium bowl, mix Panko, parmesan, Italian seasoning, garlic powder, and salt.
  • In a small bowl, whisk eggs with water.
  • Dip each zucchini stick into the egg mixture, then coat it with the Panko mixture.
  • Lightly spray the air fryer basket with olive oil and arrange zucchini sticks in a single layer.
  • Spray the zucchini lightly with oil, then air fry at 350°F (175°C) for 7-12 minutes, flipping halfway through.
  • Remove once golden and crispy. Serve immediately with your favorite dipping sauce.
