For the Chicken:

  • 1 1/2 lbs boneless, skinless chicken thighs, cut into 2-inch pieces
  • 1 1/2 Tbsp garlic and herb seasoning
  • 1 Tbsp olive oil
  • 6 skewers (metal or bamboo, soaked if using bamboo)

For the Garlic Parmesan Butter:

  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced or grated
  • 1 Tbsp garlic and herb seasoning
  • 1/2 tsp kosher salt
  • 1/3 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese

Instructions

Prepare the Skewers:

  1. If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning.

Season the Chicken:

  1. In a large mixing bowl, toss the chicken pieces with olive oil to coat evenly.
  2. Sprinkle with garlic and herb seasoning, then toss again to evenly distribute the seasoning.

Thread the Skewers:

  1. Thread 7-8 pieces of chicken onto each skewer, leaving some space between pieces for even cooking.

Air Fry the Chicken:

  1. Preheat your air fryer to 400°F for a few minutes.
  2. Place the skewers in a single layer in the air fryer basket, ensuring they have space around them.
  3. Air fry for 8 minutes, then flip the skewers using tongs.

Make the Garlic Parmesan Butter:

  1. While the chicken is cooking, mix the softened butter, minced garlic, garlic and herb seasoning, salt, parsley, and parmesan cheese in a small bowl until well combined.

Finish Cooking the Skewers:

  1. Brush the skewers liberally with garlic butter after flipping.
  2. Continue air frying for 7 more minutes or until the internal temperature of the chicken reaches 165°F.

Serve:

  1. Flip the skewers again and brush the other side with extra garlic butter.
  2. Serve hot with additional garlic butter on the side if desired.

Notes

  • Homemade Garlic & Herb Seasoning:
    • 2 tsp dried minced garlic (or 1 1/2 tsp garlic powder)
    • 1 1/2 tsp kosher salt
    • 1 1/2 tsp dried basil
    • 1 1/2 tsp dried parsley
    • 1 tsp black pepper
    • 1/2 tsp red pepper flakes
  • Oven Method: Bake at 375°F for 20-25 minutes, flipping halfway through. Brush with garlic butter before serving.
  • Grill Method: Preheat to medium-high heat and grill for 8-10 minutes, flipping once. Brush with garlic butter while grilling.
