For the Chicken:
- 1 1/2 lbs boneless, skinless chicken thighs, cut into 2-inch pieces
- 1 1/2 Tbsp garlic and herb seasoning
- 1 Tbsp olive oil
- 6 skewers (metal or bamboo, soaked if using bamboo)
For the Garlic Parmesan Butter:
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced or grated
- 1 Tbsp garlic and herb seasoning
- 1/2 tsp kosher salt
- 1/3 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Instructions
Prepare the Skewers:
- If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning.
Season the Chicken:
- In a large mixing bowl, toss the chicken pieces with olive oil to coat evenly.
- Sprinkle with garlic and herb seasoning, then toss again to evenly distribute the seasoning.
Thread the Skewers:
- Thread 7-8 pieces of chicken onto each skewer, leaving some space between pieces for even cooking.
Air Fry the Chicken:
- Preheat your air fryer to 400°F for a few minutes.
- Place the skewers in a single layer in the air fryer basket, ensuring they have space around them.
- Air fry for 8 minutes, then flip the skewers using tongs.
Make the Garlic Parmesan Butter:
- While the chicken is cooking, mix the softened butter, minced garlic, garlic and herb seasoning, salt, parsley, and parmesan cheese in a small bowl until well combined.
Finish Cooking the Skewers:
- Brush the skewers liberally with garlic butter after flipping.
- Continue air frying for 7 more minutes or until the internal temperature of the chicken reaches 165°F.
Serve:
- Flip the skewers again and brush the other side with extra garlic butter.
- Serve hot with additional garlic butter on the side if desired.

- Homemade Garlic & Herb Seasoning:
- 2 tsp dried minced garlic (or 1 1/2 tsp garlic powder)
- 1 1/2 tsp kosher salt
- 1 1/2 tsp dried basil
- 1 1/2 tsp dried parsley
- 1 tsp black pepper
- 1/2 tsp red pepper flakes
- Oven Method: Bake at 375°F for 20-25 minutes, flipping halfway through. Brush with garlic butter before serving.
- Grill Method: Preheat to medium-high heat and grill for 8-10 minutes, flipping once. Brush with garlic butter while grilling.
