- 1 stick butter, softened
- ½ cup creamy peanut butter
- 1 cup light brown sugar, lightly packed
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ cup granulated sugar (for rolling)
- 34 Hershey’s Kisses (milk chocolate, dark chocolate, or other variety)
Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a stand mixer, cream together the butter and peanut butter until smooth.
- Add brown sugar and beat until fluffy, about 2 minutes.
- Mix in the egg and vanilla extract, scraping down the sides of the bowl.
- Sift the flour and baking soda together, then gradually add them to the wet mixture. Mix just until combined.
- Scoop 1-tablespoon portions of dough, roll into balls, and coat in granulated sugar. Place on the baking sheets, spaced 2 inches apart.
- Bake for 11 minutes, until the edges are set and golden brown.
- Immediately press a Hershey’s Kiss into the center of each cookie after removing from the oven.
- Let the cookies cool on the baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.
