Ingredients
- 1 pound boneless, skinless chicken breasts, diced
- 3 cups cooked white rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 cup frozen mixed vegetables (peas and carrots)
- 3 large green onions, sliced
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce (optional)
- 1 teaspoon sesame oil
- 2 large eggs, lightly beaten
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add diced chicken, season with salt and pepper, and cook until browned (5-7 minutes). Remove chicken from skillet.
- In the same skillet, add remaining oil and frozen vegetables. Cook until heated through (3-4 minutes), then stir in green onions.
- Push vegetables aside; pour beaten eggs into the center and scramble until fully cooked. Combine with vegetables.
- Return chicken to skillet along with cooked rice, soy sauce, oyster sauce (if using), sesame oil, garlic powder, and black pepper. Stir-fry all ingredients together for about 3-5 minutes until well combined.
