  • 1 pound boneless, skinless chicken breasts, diced
  • 3 cups cooked white rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 3 large green onions, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 2 large eggs, lightly beaten
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add diced chicken, season with salt and pepper, and cook until browned (5-7 minutes). Remove chicken from skillet.
  2. In the same skillet, add remaining oil and frozen vegetables. Cook until heated through (3-4 minutes), then stir in green onions.
  3. Push vegetables aside; pour beaten eggs into the center and scramble until fully cooked. Combine with vegetables.
  4. Return chicken to skillet along with cooked rice, soy sauce, oyster sauce (if using), sesame oil, garlic powder, and black pepper. Stir-fry all ingredients together for about 3-5 minutes until well combined.
  5. Adjust seasoning as needed and serve hot.
